New beachfront retreat celebrates mexico’s casual caribbean coastal food & drink

Rosewood Mayakoba, the award-winning resort nestled in the lush enclave of the Riviera Maya, is introducing a new gastronomic hideaway along its pristine white beaches: Aquí Me Quedo. Meaning “Here I Stay,” the new ocean-side retreat entices guests to savor its Caribbean-coastal, casual ambiance and menu ranging from chilled coconut cocktails to citrus-laced ceviche and charcoal-grilled Veracruz memelas.
Joining the resort’s estimable collection of restaurants including Casa del Lago, La Ceiba Garden & Kitchen, Punta Bonita and Agave Azul, Aquí Me Quedo boasts an inventive approach to relaxed Riviera Maya fare. Crafted by Executive Chef Juan Pablo Loza the menu features antojitos, or snacks, like Froy’s Ceviche, made with freshly-caught fish, shrimp, cucumber, red onion and avocado, tossed with lime juice, fresh coconut water and Chiltepin chile or a selection of memelas, hand-made oval masa tortillas, topped with items like Zapote Wood-Smoked Pork Belly with Black Beans, Avocado Purée, Cilantro and Pickled Veggies. To complement the accessible menu, refreshments include local beer, mojitos, rose wine, and premium mezcal and tequila.
“We created Aquí Me Quedo to offer our guests a secluded yet lively oasis where they feel comfortable to spend the day by the sea and soak in the simple pleasures of life in the Riviera Maya,” Chef Loza shared.
Each culinary property at Rosewood Mayakoba is inspired by a different expression of the Mexican gastronomic journey, all driven by the expertise of Chef Juan Pablo Loza, a native of Mexico City. Aquí Me Quedo takes a cue from the relaxed retro vibe of beachside cantinas found along Mexico’s Caribbean-coast, cooking its freshly-made fare from a vintage, retro-fitted truck and offering tableside service in lounge-style seating underneath a canopy of palm trees.
Aquí Me Quedo is open Tuesday through Sunday from 12:00 noon until 7:00 p.m. for adults only (18 years+) with a USD100 minimum food and beverage consumption per person.
