With his impressive culinary background, Chef Chávez is responsible for creating exceptional dining experiences for guests, where they can explore the rich and diverse flavors and ingredients of different regions of Mexico.
As a native of Mexico City and a graduate of the renowned culinary school, Cordon Bleu, Chef Chávez has honed his skills by traveling extensively throughout Mexico, immersing himself in its culinary traditions, and mastering the techniques and ingredients of pre-Hispanic cuisine.
At Rosewood Mayakoba, Chef Chávez is leading the hotel's commitment to responsible and sustainable sourcing. He is also a Gastronomic Ambassador at Come Pesca, a national organization dedicated to promoting sustainable seafood and fishing practices. Chef Chávez is an active member of #PescaConFuturo, the nonprofit movement that advocates for the balance and health of Mexico's oceans.

With roots in Puebla and a deep appreciation for Mexican gastronomy, Chef Enrique Mancilla is responsible for ensuring that, each culinary proposal at Rosewood Mayakoba provides a heightened experience for guests, highlighting the gastronomic richness of Mexico, the quality of its ingredients, and the genuine warmth of its hospitality.
After graduating with a degree in Hospitality and Tourism in his hometown of Puebla, the chef, who inherited his passion for cooking from his grandmother and mother, began his culinary career by collaborating in various restaurants in the city, perfecting his skills in the vast Pueblan cuisine. His first foray into hospitality was with Mandarin Oriental in Riviera Maya, an opportunity that later opened the door for him to join the team of chefs at Rosewood Mayakoba in 2013. Quickly, Enrique climbed the ranks and, starting as a chef de partie, became a key player in shaping the hotel's gastronomic essence, characterized by honoring the gastronomic diversity of Mexico in a fresh and contemporary proposal.
Today, as Executive Sous Chef, Enrique captures his culinary memories in the menus of the hotel's different restaurants, and although he left behind the city where he grew up, he still enjoys incorporating typical ingredients from Puebla into his dishes, such as moles, sesame seeds, or papalo, among others.
Jessica García, originally from Cuernavaca, Morelos, is a graduate of the Universidad del Valle de México, where she earned a degree in international gastronomy. In her current role as Pastry Chef at Rosewood Mayakoba, she is responsible for providing guests with the sweet side of the resort’s robust culinary offerings, featuring creative desserts that incorporate local flavors of the Yucatán.
From a young age, Jessica discovered her passion for cooking while watching her mother showcase her culinary skills and bring the family together. After completing her culinary degree, she specialized in pastry under the guidance of esteemed figures such as Luis Robledo, Antonio Bachour, Javier Guillen, and David Briand. Jessica began her career in the hospitality industry at Hilton Mexico City Reforma, where she spent four years perfecting her pastry and baking techniques before joining the sister properties of Conrad Punta de Mita, Conrad Tulum Riviera Maya, and Hilton Tulum. She ultimately rose to the position of Sous Chef Pastry at the latter two hotels.
With a flourishing career in hospitality and a remarkable talent, Jessica joined Rosewood Mayakoba in March 2023, eager to unleash her creativity and enhance the sweet offerings at each of the resort’s dining venues, from the Northern Baja inspired Agave Azul with Asian influences; to Aqui me Quedo’s cuisine inspired by Mexico’s Caribbean coast, and more . Her unique creations are characterized not only by their exquisite flavors but also by their careful presentation. Jessica is an expert in making every moment sweeter and loves to explore new ingredients and combine them with local products to create memorable moments for guests.
