Las Brasas de Castellana

One of the most vibrant and dynamic dining spaces at Rosewood Villa Magna, the restaurant maintains a commitment to local gastronomy, from breakfast, through lunch to dinner.
Led by Executive Chef Francisco Sanabria, the restaurant gives prominence to the highest quality meats, fish, and vegetables prepared with flair and spectacle on the charcoal grills in the spectacular open kitchen, from which it takes its name.
Tempting dining options include generous breakfasts, classic tapas from Madrid, gourmet lunches as well as fine dining in the evening. Service is attentive and friendly, with an experienced team who can advise guests on specialties as well as recommend the perfect wines to pair with each dish or meal.

Chef Jesús Sánchez, founder of Amós, brings to the Spanish capital his new culinary concept of contemporary gastronomy inspired by the finest traditional cuisine of northern Spain.
The unique experience of Amós is built upon four fundamental pillars: tradition, essence, flavor and produce. It is a tribute to the land, sea, customs, flavors and ingredients of one of the richest gastronomic regions of the Iberian Peninsula.
Mauro Gracia Lamas, as head chef, and Kevin Suárez as sous chef, enable guests to enjoy a culinary journey to the northern region of Cantabria, from the heart of Madrid.
Emblematic ingredients such as anchovies join a menu that includes the finest vegetables from the Navarre kitchen garden as well as meat and fish from Cantabria.
