Jesús Sánchez, born in Navarre, and Cantabrian by adoption, has the soul of a cook and the hands of an artist.
Since 1993 he has been the founder and chef of Cenador de Amós, in the tiny village of Villaverde de Pontones.
Thanks to his genius, he has firmly placed this small Cantabrian village of barely 350 inhabitants on the international gastronomic map; as recognized by his remarkable achievement of 3 Michelin stars, a further green star for sustainable gastronomy, and 3 Repsol suns.
Undoubtedly, his cuisine is that of Cantabria. He navigates diners through a gastronomic journey of this northern Spanish region, which is guided by memories of Navarre, and its exceptional vegetables, and his formative training in Basque and French cuisine.

In November 2021, Jesús Sánchez started a new chapter in his career, with the creation of Amós restaurant in Madrid, at the emblematic Rosewood Villa Magna hotel. This exquisite fine-dining restaurant brings the culinary essence and cultural character of Cantabrian cuisine to the center of the capital.
