Abu Dhabi foodies can now enjoy a traditional Lebanese meal as served at home

Abu Dhabi, 10 March 2019: Sambusek, the Lebanese restaurant at Rosewood Abu Dhabi has introduced a new one-of-a-kind dining concept – At Home with Chef Emad. The experience offers connoisseurs of the cuisine the chance to enjoy a traditional meal served by the chef himself right at your table as he delights with his cooking while his guests enjoy the perfect setting overlooking the Arabian Gulf.
Sambusek Head Chef Emad Zalloum is a popular ambassador of the eastern Mediterranean cuisine and describes the new concept as “a personable culinary journey with a homey feel”. He comes ready with his mini-kitchen trolley filled with fresh ingredients and shares with his guests a glimpse of how food is prepared and served in a typical Lebanese home.
This remarkable experience will give guests the opportunity to engage with the much-loved chef, while sampling the best of Lebanese fare. The key to the flavour-packed delights at Sambusek lies in the freshness of the produce.
The “At Home with Chef Emad” culinary treat starts with a variety of cold mezze including Sambusek’s signature smoked hummus, mutabbal, labneh hammda, fattoush, tabbouleh and a mixed organic platter. This is followed by an assortment of hot mezze, which includes chicken liver, makanek, cheese manakish, and prawns Provencal. These will be served with Lebanese bread freshly baked in a wooden oven.
While Chef Emad prepares the appetisers, he shares his tricks and tips on how to cook the dishes and reveals the ingredients and techniques that make each dish authentic.
For the main course, guests have two options: charcoal mixed grill and ‘Noah’s Ark’. The mixed grills consist of a wide selection of lamb chops, lamb shish kebab, lamb kofta, chicken shish taouk, and grilled vegetables.
One of the highlights of the evening is Chef Emad’s own creation – the ‘Noah’s Ark’, which features a lamb shank cooked for 11 hours at 60 degree Celsius on a generous bed of saffron rice and a selection of colourful steamed vegetables inside a pumpkin.
Inspired by his grandmother’s cooking, Chef Emad said: “She loved cooking with pumpkin; as she knew how much flavour it can add to a dish when combined and cooked the right way, and that inspired me to create my own dish with it.”
To satisfy the sweet-toothed, Chef Emad serves the Sambusek Sunset, which allows one to have a taste of all the signature desserts at the award-winning restaurant including Aish el Saraya, Arabic ice-cream, and cheese kunafa with Emirati honey.
The “At Home with Chef Emad” experience is available every Thursday evening for a minimum of four guests per table. A 24-hour prior booking is needed. The set menu is priced at AED 235 per person, inclusive of Lebanese grapes and beverages.
