The Award-Winning Hotel Welcomes New Talent in Time to Celebrate its Milestone Twelve-Year Anniversary

San Miguel de Allende, Mexico (February 2023) — Rosewood San Miguel de Allende, the luxury hotel nestled in an enchanting artists’ village north of Mexico City, is pleased to announce the appointment of its new Managing Director, Guillermo Varela, and Executive Chef, César Enciso.
Guillermo Varela brings more than 15 years of experience in luxury hospitality to Rosewood San Miguel de Allende. Born in Costa Rica, Varela spent most of his life between Spain and Asia, where he cultivated an unparalleled global perspective and a passion for the high-end yet warm hospitality. Most recently, Varela held the role of Managing Director of Rosewood Luang Prabang in Laos. His resume also includes positions at various luxury brands around the world including Aman, Alila, and St. Regis.
Varela, who joined the property in the autumn of 2021, is thrilled and leads this exciting new chapter at Rosewood San Miguel de Allende, which celebrates its twelve-year anniversary in March 2023. Varela’s sophisticated approach and commitment to elevating the guest experience will be key in maintaining the property’s position as not only the best hotel in San Miguel de Allende but one of the best in Mexico and beyond.

Rosewood San Miguel de Allende also welcomed a new leader to its culinary team, César Enciso, who joined the hotel in summer 2022 as executive chef. After earning his degree, Enciso completed his first culinary internship at Rosewood San Miguel de Allende before proceeding to hone his skills over the next ten years at various prestigious hotels around Mexico. As executive chef, Enciso oversees all culinary operations at the hotel, including Restaurant 1826, Tequila Bar 1826, Luna Rooftop Tapas Bar, Agua, and Los Pirules Artisan Kitchen & Garden. At each venue, Enciso strives to offer guests an authentically Mexican epicurean experience that also reflects Rosewood’s A Sense of Place® philosophy, which celebrates the roots, culture, and traditions of the destination.
