Guillermo Varela brings more than 15 years of experience in luxury hospitality to his new position as Managing Director at one of the most iconic hotels in Mexico, Rosewood San Miguel de Allende. As part of this role, Varela oversees all aspects of the hotel with the primary objective of elevating the guest and associates' experience and maintaining the property's well-earned reputation as one of the best hotels in Mexico.
Varela pursued a path in hospitality early on, earning a degree in economy and gastronomy at Le Cordon Bleu Institute in Madrid, and completing several specializations at Cornell University, including hotel marketing, talent acquisition through social media, Human Resources Management, and personnel administration. He also earned a postgraduate degree in Executive Leadership at the University of Oxford.
Born in Costa Rica and raised in Spain, Varela began his career working at different Michelin star restaurants across Spain and Italy, including the acclaimed El Bulli, Arzak, and Koldo Royo. His drive and dedication led him to the role of Executive Chef at the St. Regis Mardavall in Mallorca before being called to serve as Director of Food & Beverage at The Hermitage, A Tribute Portfolio Hotel, in Jakarta, Indonesia, where he managed large teams and honed his leadership skills.
After three years at The Hermitage, Varela moved to the luxurious Javanese Resort Alila Solo, where he quickly climbed from EAM to Assistant Director of Operations of the resort's sister property, Alila Seminyak, in Bali. His professional development eventually led him to Aman Resorts, where he started in Bali at Amankila, Amandari and Amanusa on an induction program, then transferred to oversee all functions of the hotel group's Sri Lanka properties, Amangalla and Amanwella, to then moving into a similar role at Amanzoe in Greece.
In 2019, Varela joined Rosewood Hotels & Resorts, returning to Asia and assuming the role of Managing Director at Rosewood Luang Prabang in Laos, where he supervised all operations, planning efforts, and administration.
In 2022, Rosewood invited Varela to run one of its most iconic properties in Mexico: Rosewood San Miguel de Allende. As Managing Director, Varela brings not only a fresh global perspective but also his strategic global vision, superior management style, and passion for luxury hospitality.
