Chef César Enciso joined Rosewood San Miguel de Allende in 2022, bringing with him more than 10 years of culinary expertise and a deep passion for Mexican hospitality. Originally from Guanajuato, Enciso oversees all culinary operations at the hotel including 1826 Restaurant, 1826 Tequila Bar, Luna Rooftop Tapas Bar, and Los Pirules Artisan Kitchen & Garden, with a mission to provide diners with an authentic epicurean experience that embraces Rosewood’s signature Sense of Place philosophy.
Enciso developed his passion for cooking at a young age, learning alongside his father and grandmother who instilled in him a deep appreciation for traditional Mexican cuisine, techniques, and flavors. Growing up, Enciso spent time in the countryside giving him the opportunity to connect with farmers and ranchers and understand the importance of a kitchen with a conscious – cooking thoughtfully, responsibly, and sustainably.
After earning a degree in gastronomy at the Technological University of San Miguel de Allende, Enciso began his professional career as an intern at Rosewood San Miguel de Allende, where he was first introduced to the hotel industry. He later moved from his home state to gain experience across different regions of Mexico, accepting a position as restaurant manager at Mundo Imperial Acapulco and then as executive chef at Aak-Bal All Suites Resort in Campeche. One year later, Enciso moved to Los Cabos to be part of the culinary team at luxury property Le Blanc Spa Resort, where he oversaw the hotel’s various F&B venues. Enciso continued to nurture his passion for regional Mexican cooking while traveling across the country, and then returned to his roots in San Miguel de Allende to assume the position as executive chef.
