The veteran pastry chef, who first joined Rosewood Phnom Penh’s Patisserie in 2017, starts his latest chapter as Executive Pastry Chef, leading a team known for its exquisite cakes, premium handmade chocolate creations and elegant French pastries.

Rosewood Phnom Penh is pleased to announce the appointment of Sonara Sieng as Executive Pastry Chef.
Over the past 11 years, Sonara has been working his way up the ranks in Cambodia’s culinary world, first interning with Raffles Le Royal before joining Sokha Hotels, where he was responsible for the brand’s French breads, desserts and custom birthday cakes.
In 2017, Sonara joined the Rosewood family as Chef de Partie and has grown with the hotel ever since.
Over the years, he has sharpened his managerial skills, learned new techniques to infuse both Western and Khmer flavors into his pastries and has perfected the art of making millefeuille – the timeless treat of puff pastry sheets layered with decadent pastry cream – at the Patisserie.
“I believe it is the best millefeuille in Cambodia,” says Sonara.
Sonara has also earned a favored reputation for his stunning custom cakes, coming up with creative flavors, colors and textures that surprise and delight the hotel’s discerning guests.
Sonara says he fell in love with gastronomy, especially sweets, at an early age. He recalls with fondness the way his mother would make bobor sondek kheav, his favorite Khmer dessert, made from green mung beans, coconut milk and sugar. This dessert is still a key treat in his culinary repertoire, and one he loves to make for friends, loved ones and guests who wish to experience authentic Cambodian flavors.
“I have been fortunate enough to work under great leaders and mentors at Rosewood Phnom Penh. They have supported me from day one, and I am excited to apply the lessons I’ve learned from them in my new role as Executive Pastry Chef. I always believe that practice makes perfect, and I will instill this philosophy across the team,” says Sonara.
