This year, Holborn Dining Room, the grand British brasserie located within Rosewood London will pay homage to one of the country’s best loved dishes, the humble pie. Executive Head Chef Calum Franklin, who is renowned for constructing beautifully intricate pastry creations, has designed four distinct flavours for diners to enjoy, with one offered seasonally throughout the year.
The series begins in February with Mutton Curry Pie (consisting of slow cooked shoulder made with mutton from Philip Warren Butchers in Cornwall, potato and traditional curry spice mix) served with mango salsa. From April, diners can try Hand Raised Pork Pie with a hot water pastry (filled with pork shoulder, pork leg, pancetta, smoked ham hock and fennel seeds) with cider gravy. By July, Chicken, Girolle & Tarragon (a classic chicken and mushroom pie with added tarragon, and mushrooms sourced from Scotland) served with garden peas will be on offer. Finally, from September, diners can tuck into Steamed Steak & Kidney Pudding (a mix of beef cheek and beef chuck steak braised with onions and kidney) served with an ale gravy. Diners can pair their pie with one of the fine wines or draught beers and ales on offer, or opt for another British classic, gin, mixed at the relaxed and stylish, copper-topped Gin Bar.
The pies are intricate pastry constructions that take the team up to four hours to make before cooking. Calum and his team create detailed lattice work for the toppings, taking up to two hours at a time in the walk-in fridge, and pies are egg-washed at least three times by brush to create a deep burnish on the pastry once cooked. The result is a feast for the eyes and palate with each and every pie cooked from raw and entirely handmade, from the pastry and lining to the filling and decoration.
Calum Franklin began his career at Michelin-star restaurant Chapter One in Kent, where he initially developed his culinary knowledge and skills before later moving onto roles at The Ivy, Aurora at the Andaz Hotel, Indigo at One Aldwych Hotel and Roast in Borough Market. He joined Holborn Dining Room as Head Chef in 2014 and sources the best local and seasonal produce to bring to life the quintessential British flavours at the restaurant. He is passionate about craftsmanship and is known for his intricate and elaborate pastry work at the restaurant. He comments:
“What I want to do with these old-school pastries is reinvent them with the superior ingredients that we have in the UK. I like putting dishes on the menu that remind people of their childhood and then when they are served, it’s a refined version of that memory. My goal is to push the boundaries of crafted pastry making. ”
Situated moments away from Covent Garden, Holborn Dining Room is a vibrant bustling dining salon showcasing elegant design characteristics of reclaimed oak, antique mirroring and red leather banquettes with tweed detailing. Attracting Londoners and visitors to the city, the venue offers a relaxed atmosphere, coupled with sophistication and glamour.
MAISON CAULIÈRES treatments were created for both men and women, with the body products including the highest quality natural ingredients sourced from the garden estate. Vegetable oil and honey are at the heart of the Desforges de Caulières creation, known for their exceptional virtues and beneficial properties due to their high concentration of essential fatty acids, they nourish the skin while evoking the scents of the seasons.
These exclusive body treatments are described as sensation-rituals, guiding guests through an imaginary discovery as taking a stroll through the seasons; from the touch of the wind on the skin, the tickle of spring rainfall, the sweet scents of summer, and the soothing hue of the blue sky and the vitality of the colour orange. Guests can choose from energising or calming body massages inspired by each season, to a soothing hand massage, as well as two signature treatments: a signature deep tissue massage and a signature body treatment journey, exclusively created by MAISON CAULIÈRES for Sense spa at Rosewood London.
The treatments combine exquisite ingredients found on the lush family estate with expert techniques. The signature hand treatment Les Mains À L'Origine is inspired by biodynamic massage and reflexology and includes a scrub and hot towel rinse, a hand mask, and a relaxing hand and arm massage to eliminate muscle tension and stimulate reflex points. Another signature treatment, Comme Une Terre Fertile, focuses on the full body with a healing, deep tissue massage. A more playful and holistic treatment is the brand’s Lumiere Des Saisons which follows nature’s cycle to take guests on a journey through all seasons, while inviting them into 4 different olfactory universes. The new À L’Aube Des Sens treatment, too, uses scent to guide the experience in the form of an infused footbath followed by a foot and leg massage. Leading into summer scents is the Le Temps D’un Songe, which uses fragrances of broom flower and honey to stimulate the body from toe to head with an exfoliation to increase circulation and promote cellular renewal, followed by an energetic massage with warm oils to create a sun-like sensation.
