Fernando Corona Burch is the Executive Chef of Rosewood London. In his role, Chef Fernando is responsible for providing strategic direction to Rosewood London’s dynamic culinary team and overseeing the property’s food and beverage outlets, Holborn Dining Room, Mirror Room, Scarfes Bar, as well as in-room dining and banqueting.
Chef Fernando has over 20 years of experience in the hospitality industry across Europe, Mexico, Asia Pacific and the UAE. His career spans Michelin-starred restaurants, luxury hotels, and previous leadership roles with Rosewood Hotels & Resorts, including Executive Chef at Rosewood Hong Kong and Rosewood Beijing, and Director of Culinary Operations at Rosewood Phnom Penh and Rosewood Beijing.
Most recently, Fernando was part of the pre-opening team and served as the Executive Chef at the Park Hyatt Los Cabos in Baja California Sur, Mexico, bringing valuable experience in launching and establishing new culinary programs.
Fernando’s culinary journey began at 3-Michelin-starred restaurants El Celler de Can Roca in Girona and Restaurante Arzak in San Sebastian, Spain. He later took on his first Executive Chef role at Hotel Banyan Tree Shanghai on the Bund, where he was part of the pre-opening team.
