La Canonica Cooking School

Using locally sourced meats and cheeses with fresh herbs and seasonal vegetables from the organic kitchen garden, you will learn how to transform these ingredients into delicious, authentic Tuscan and Italian dishes using traditional cooking skills. The engaging chef-led, two-hour classes are kept deliberately small to ensure personal attention and hands-on involvement.

Up to six guests at a time. From 10 a.m. to 12 noon, and from 4 to 6 p.m. (Minimum age: 12; 18 if not with an adult). Prices start from EUR230 per person, and from EUR1,300 for a private lesson.

Tuscan Farms and Purveyors

The estate fosters relationships with a carefully selected group of local providers who embody and enrich the gastronomic heritage of Tuscany through respect for local culinary traditions.

Products from these world-renowned partners include: traditional Chianina meats; organic, often rare, cereals and legumes; selection of biodynamic, seasonal goat cheeses; selection of biodynamic Tuscan Pecorino; chocolate cream from artisanal chocolate producers; artisanal beers; and white and black truffles gathered from the village of San Giovanni d’Asso.

In addition, the estate’s own bounty includes wine, grappa, honey and olive oil from its on-site winery, fresh vegetables, fruits and herbs from its organic garden, and Tuscan cold cuts and game from its farm.
