Justin Tan has been appointed as the Executive Chinese Chef t at Rosewood Beijing, effective August 1, 2023, and is responsible for the operations and production processes of The House of Dynasties and banquet kitchen at Rosewood Beijing.
Justin Tan, a native of Zhanjiang, Guangdong Province, who has more than 30 years’ culinary experience and his deep knowledge and skill played a key role in leading his team being awarded three Michelin stars for two consecutive years while he was at its helm as executive chef. In 1993, Tan studied with a master in Guangzhou, devoting himself to practicing the basic skills of Cantonese cuisine, and successively worked in famous restaurants in Guangzhou, Shenzhen, Zhejiang and other regions. In 2013, he joined Langham Hospitality Group and two years later, he was promoted to Executive Chinese Chef at The Langham, Xintiandi Shanghai.
As a renowned chef in the field of Cantonese cuisine, he has achieved many impressive awards in his culinary career. In 2016, Michelin inspection included China for the first time, and in September of the same year, the first edition of the Michelin Guide Shanghai was released. With extraordinary traditional cooking skills and innovative interpretations of Cantonese cuisine, Tan led the team to the first Michelin three-star restaurant in Mainland China, as well as 2017 and 2018 consecutively. As well, when Tan was executive chef of one restaurant achieved a coveted One Diamond in the Black Pearl Restaurant Guide six years in a row.
Tan has studied various classic Chinese cuisines and is particularly accomplished in Cantonese, in which he is very particular about ingredients, cooking temperatures and techniques. He is focused on product quality and is passionate about sourcing the best natural ingredients, while also exploring innovative interpretations of traditional dishes. He has created acclaimed signature dishes such as the ‘Swan Soufflé’, ‘Alpine Matsutake Soup’, and ‘Turquoise Lobster Balls ‘. Chef Tan adheres to his vision of creating dishes that are "rough around the edges, yet remarkably approachable, allowing the simplicity to shine through." This distinctive aesthetic, concept of simplicity and zen-like elegance form the elevated culinary art that he performs.
