Sweets inspired by Executive Pastry Chef Dustin’s memories of childhood and the flavors of summer fruits

Rosewood Bangkok invites guests to indulge in seasonal pleasures of "Summer Symphony," a new afternoon tea experience celebrating the vibrant flavors of summer fruits. This delightful offering is available at Lakorn European Brasserie from 1 July until 30 September 2023.
"Summer Symphony" showcases a medley of sun-kissed fruits, carefully handpicked to create an enticing fusion of flavors and colors. The menu includes tantalizing amuse-bouche bites such as Tropical Gazpacho with lychee, watermelon, and coconut foam, as well as Poached Oyster with Granny Smith, cider cream, green apple, and gold leaf.
In crafting the latest afternoon tea, Executive Pastry Chef Dustin Baxter taps into memories from his childhood in Michigan, where he spent numerous summer days immersed in strawberry patches, carefully selecting fruits even before they reached full ripeness (experiences which later kindled his love for tangy flavors). He recalls joining his mother to harvest rhubarb from their backyard to make exquisite strawberry rhubarb pies, and seeking out concealed raspberry patches alongside his father before the bears did.
Chef Dustin's reminiscences of summer months include cleaning sweet corn from the neighbor's farm and indulging in an abundance of roadside cherries – memories which have influenced in the creation of dishes such as Cherry Pistachio Tart with mascarpone mousse and cherry cremeux; Blueberry Lime Cake with sweet corn financier and blueberry ginger compote; and Raspberry Éclair with vanilla chantilly and citrus gel.
Working alongside Chef Dustin is Executive Sous Chef Frank Wackerhagen, who draws on his fine-dining expertise to craft a savory menu evoking the essence of the season, from Chicken Liver Parfait with brioche toast and cherry blossom chutney to Iberico Ham with tomato spread and Sofritto Tart. “Summer Symphony” sandwich options include Smoked Salmon & Quail Egg, Paris Ham & Silver Onion, and Japanese Cucumber.
“I want this afternoon tea to be a story of the flavors that I experienced in the summer months growing up, told in delicately crafted nibbles for Rosewood guests,” said Dustin Baxter, Executive Pastry Chef, Rosewood Bangkok.
To enhance the experience, guests can opt for a choice of beverage pairing including Champagne or a Summer Symphony signature tea cocktail made with Billecart Salmon Champagne, strawberry rhubarb infused white tea, peach and jasmine soda.
The Afternoon Tea can be enjoyed at Lakorn European Brasserie for THB 2,700++ per set per couple including tea or coffee from 1 July until 30 September 2023. For guests seeking a beverage pairing, an additional THB 1,800++ can be added for two glasses of Billecart Salmon Champagne or two Summer Symphony signature tea cocktails.
