Inspired Dining Destinations Combine the Best of The Bahamas with International Influences to Offer One-of-a-Kind Culinary Experiences.

NASSAU, THE BAHAMAS (November 2019) – Rosewood Baha Mar, the elegant sanctuary set within the Caribbean’s newest resort destination of Baha Mar, today announces the debut of two innovative culinary concepts, Malam Indian Grill & Wine Cellar and Tingum, on the sand, as the newest and most inspired dining destinations in Nassau. Showcasing the most quintessential Indian cooking traditions and techniques as applied to the best of the local landscape, Malam guides guests on a unique culinary journey that excites all of the senses. Elsewhere, set atop the pristine sands of the resort’s beautiful beachfront, Tingum highlights fresh, fish-centric dishes straight from the Bahamian seas in a relaxed an amicable environment. Together combining the signature flavors and rich bounty of the region with international culinary expertise, the new venues provide visiting guests and locals alike with ample opportunity to enjoy an eclectic dining experience, all from within one of the most stunning settings in the world. Helmed by Executive Chef Siddharth Krishna, the two restaurants join Rosewood Baha Mar’s existing culinary concepts of Costa, The Library and Manor Bar and reinforce the property as the island’s leading luxury resort with unparalleled accommodations, amenities and experiences.

Titled after India’s most famous explorer and seafarer whose name has now come to mean “navigator,” Malam Indian Grill & Wine Cellar combines the unique flavors of the country’s top traditional cooking styles with the fresh seafood found throughout the Bahamian waters. Referring to the cooking of food in a clay oven, grill and flat top, respectively, Tandoori, Sigri and Tawa are three of the many Indian techniques to have made their way throughout the world’s most beloved island destinations, particularly that of the Caribbean, and command the menu at Malam. Characterized by rich spices and smoky flavors, the distinct gastronomic approaches add depth and complexity to every dish, perfectly complementing and elevating seafood-centric fare from prawns to salmon to swordfish. The result is an exquisite culinary experience that is simple yet profound.
With décor and ambience that is inspired by a global journey of discovery spanning hundreds of years and thousands of miles, Malam evokes a vibrant sense of adventure and conjures up visions of exotic landscapes and memorable wanderings. Designed by Wimberly Interiors, the space features custom banquette seating, tables of dark woods with gold finishes and ceilings of draped fabrics and juxtaposes varied color palettes and patterns to create an environment that is entirely unique.
An exciting and eclectic menu offers small plates designed for sharing; another nod to the culinary traditions and styles of India. Dishes range from vegetarian-friendly options including Smoked Sweet Potato Chaat with Cumin Raita and Crushed Eggplant with Dal Roti and Spiced Yogurt to meat-heavy dishes such as Tandoori Lamb Chops with Mint Chutney and Beef Xacuti with Coconut and Chilli. A robust seafood section showcases the abundant local offerings of the destination, with highlights of Bahamian Grouper with Harra Salan and Gram Flour Fritters and Half Spiny Lobster with Curry Leaf and Fresh Tumeric. Additional menu items include Indian classics Butter Chicken and Paneer & Vegetable Curry, as well as delectable desserts including Chocolate Watalppam with Cashew Praline and Coconut Ice Cream and Baked Yogurt “Bhapa Doi” with Mango and Crumble.
Malam Indian Grill & Wine Cellar is open for breakfast (7:00 a.m. – 11:00 a.m.) on Sunday through Thursday and (7:00 a.m. – 11:30 a.m.) on Friday and Saturday and dinner daily (6:00 p.m. – 10:30 p.m.).
Tingum, on the sand, the resort’s first-ever restaurant set directly on the beach, captures the spirit of an oceanfront escape through a laidback yet luxurious atmosphere, sublime setting and clean and simple cuisine. Situated steps away from the sea and named for the island’s internal term for “that thing,” the restaurant recalls the relaxed and inviting nature of a casual beach café, elevated to complement the sophisticated and chic character of the refined Rosewood resort. Through alluring ambiance inspired by the world’s most iconic seaside sanctuaries and a warm and approachable atmosphere and service style that is distinctly Bahamian, Tingum will quickly establish itself as the destination of choice for a barefoot lunch or dinner of freshly landed seafood accompanied by a crisp and refreshing cocktail.
Entirely alfresco, Tingum has been meticulously designed to strike a perfect balance between the effortless and the elegant. Locally inspired and sourced statement pieces, such as wooden benches and tables and bohemian baubles and tableware, are scattered across the sand in a manner that is informal yet deliberate. A mix of communal seating spaces and individual tables offer guests an opportunity to mingle with new friends or engage in a more private and intimate dining experience.
A robust menu highlights the best of the local landscape, showcasing fresh, day-of fare that was sourced from the seas and shores just steps away. At lunch, lighter options include Tropical Conch Salad, Spiny Lobster Roll and Tuna Fish with Avocado, Jasmine Rice, Cucumber and Radish, while dinner service features dishes such as Grilled Octopus with Paprika Potato and Ginger Aioli, Local Grouper with Spinach and Apple Salad and Pulled Chicken with Spicy Caramelized Tomato Sauce and Aged Cheddar. A selection of wine, beer and handcrafted cocktails has been carefully curated to offer a perfect beverage pairing for each dish.
Tingum, on the sand is open for lunch (11:00 a.m. – 5:00 p.m.) and dinner (7:00 p.m. – 10:00 p.m.) daily, weather permitting. Seating is offering on a first-come, first-serve basis.
