Meet Shibani Mone
Shibani Mone, Senior Chef de Cuisine at Caruso’s, the oceanfront signature restaurant at Rosewood Miramar Beach, is a shining example of a modern perspective at the upper echelon of fine dining. Chef Shibani believes that discipline and assertive leadership are paramount, fostering an environment where attention to detail reigns supreme, and creativity thrives.
From a culinary perspective, Shibani is classically trained in French and Italian cuisine, with influences from her Indian heritage. Her culinary education began in her mother’s kitchen in India, and she followed her passion around the world. Upon graduating from The Culinary Institute of America, she honed her skills with positions at Eleven Madison Park, Union Square Hospitality Group, and Quince Restaurant in San Francisco. She has been instrumental to Caruso’s success since joining the team in 2021.
Shibani emphasizes the importance of understanding spices, flavor profiles, and detailed technique-driven cuisine. Seasonality, informed by microclimates and local produce, is a guiding principle, reflecting respect for nature and a commitment to detail and technique. She is an unwavering advocate of sustainability, and with her help Caruso’s has been recognized with a Michelin Green Star, James Beard Smart Catch, and as an OceanWise and FishChoice partner.
