Heirloom Organic Tea Selections by Five Mountains
White Tea
White tea is the least processed of all teas. The young leaves & buds are picked in the spring, dried in the warm sunshine. White tea is delicate in flavor, retains a great amount of nutrients, medicinal benefit and has very low theine content.
HEIRLOOM WHITE
The most prized of all white teas, heirloom white is made entirely of tender, spring buds, picked from the biodiverse virgin rainforest of Southern Yunnan in China. These precious leaves contain the highest levels of antioxidants with cleansing and uplifting attributes. Remarkably soft with herbaceous, nutty aromas and mineral tones.
Green Tea
Green tea has as many subtleties of flavor as the finest of wines. The freshly picked tea leaves are allowed to dry and then are steamed which stops the oxidation process, allowing the leaves to remain green while still retaining a good amount of nutrients.
JASMINE PETAL
Fresh jasmine flowers are added to the camellia sinensis leaves (the tea plant) from the Gu Mountain in the Fujian Province of China creating floral spring aromas & mellow overtones with a slightly astringent finish and lingering tea while increasing the metabolism.
GENMAICHA
Legend has it that the origins of the tea dates to the 15th century when a servant (Genmai) accidentally dropped a few grains of stollen rice hidden up his sleeve as he was pouring tea for his master. Although there are tales to most stories, Genmaicha tea offers a more factual reality – historically and for economic reasons, genmaicha tea was mostly consumed by the less fortunate population, as rice was acting as a filler and helped reduce the price of tea. This tea harvested on the Kawane Mountains of Shizuoka Prefecture in Japan offers toasty minerality, buttery and nutty flavors of popcorn with its richness and grassy dew aromas makes genmaicha a regenerative tea.
Oolong Tea
Oolong tea is also referred to as blue tea, the leaves are partially oxidized and combine the characteristics of both the cleanness of green teas and the richness of black teas. The tea leaves are exposed & withered by hot air for several hours to reduce their water content to begin oxidation. Before the leaves are fully fermented, they are dried in an oven to stop the oxidation process.
ROASTED TENDER BRANCH
In China, particularly in Southern Yunnan where the leaves are harvested; this tea is called Tie Guan Yin referring to the Iron Goddess of Mercy. This balanced tea offers robust flavors with rich notes of toasted cane sugar, caramel, almonds and subtle lilac scent.
Black Tea
Black tea is a fully oxidized tea, very dark in color and full in body, crafted to reveal the strongest & deepest flavors. The tea leaves are withered and rolled to distribute the aromas and essential oils. Black tea is what the West calls a heavily oxidized tea, though in its place of origin its known as ‘Red’ or ‘Crimson’ tea (Hong cha) after the hue of the tea water. To confuse the situation more, Rooibos has been marketed as ‘Red’ tea although is not a tea, rather an infusion…but it is a different story.
LYCHEE BLACK
A sweet & refreshing gongfu hongcha black tea plucked in the Guangdong Province of China infused with lychee essential oils providing a fruity & tropical profile while remaining the strength and depth of a black tea.
GRAND CRIMSON
A true classic Nilgiri black tea of a complex & unique blend of tea leaves from Western Ghats, Blue Mountain Hills & Tamil Nadu in Southern India. Grand Crimson which is an organic English Breakfast tea offers robust, malty and full-bodied flavors. Its high theine content sharpens focus and helps to stay alert.
BERGAMOT BLACK
This traditional Earl Grey tea is made with zhu ye black tea from Qi’Men County Garden in the Anhui Province of China delicately combined with Italian bergamot rinds. The result is a clean and exceptionally tawny, rich & bright tea with exhilarating citrus notes that revitalize and elevate concentration.
SPICED CHAI
An exquisite blend of black tea leaves from Kashmir, India spiced with cloves, cardamom, ginger & cinnamon. Spiced chai provides warmth, sweetness, complexity and soothing attributes for the body & mind alike.
Infusion
Herbal or floral teas are not strictly teas because all teas come from the leaves of camellia sinensis. They are infusions of the leaves, stems, buds of different herbs and flowers. Infusions have a long history dating back to ancient China and Egypt, where infusions, sometimes called tisanes, were consumed and still are for both enjoyment and medicinal purposes.
PACIFIC PEPPERMINT
This elegant mint harvested on the Cascade Mountain Valley in Washington State makes a remarkable smooth, fresh, cooling, vibrant and highly aromatic tisane. This Pacific peppermint perfectly accompanies any food from savory to sweet and works particularly well as a digestif aid.
NILE VALLEY CHAMOMILE
Sourced in the North Balkans region of Southeastern Europe and Asyut in the Nile Valley of Egypt, boasting full buds enriched of fresh cut apple and melon aromas. This theine-free option is suitable for any season while releasing calming and anti-inflammatory attributes.
